Description
The coffee
This yellow Icatu grows in the part of the farm that used to be a theme park. Called the Train Lot, it’s located inside what used to be the park’s old train ride. Once ripe, it takes on a beautiful shade of yellow with brown spots (like a ripe banana) and is selectively harvested.
The process
Once the coffee is harvested, it is dried on patios located within the farm and receives a lot of cool breeze. This breeze creates a natural balance between direct sunlight and allows the coffee to dry gently in the sun. Once dry, it is bagged and sent to the mill warehouse for safe storage. Once an order is placed, the coffee is processed and shipped from the mill. The coffee is continually cupped by certified Q Graders to ensure safe storage and optimal quality.
The producer
Finca San Antonio Amatepec and Finca San José are urban coffee farms located in San Salvador, El Salvador. Since 1970 they have been producing specialty coffees using sustainable methods. Members of the International Women’s Coffee Alliance (IWCA) and the Denomination of Origin Bálsamo Quezaltepec. They have also been awarded a 2021 Sprudgie for “Remarkable Coffee Producer”
